Turnaround Time!

  
Those of you who follow me on Twitter @WalkEatLive know that I’ve been moving over the past couple of weeks. It’s been a change, for sure. A few years ago my husband and I took an opportunity to relocate to Nova Scotia. We had a great time, and made some very good friends. We embarked on the grow-your-own food lifestyle we had imagined. But a funny thing happened. Even though we had returned to the province where we were born missed the city we had called “home” for more than 30 years. We missed our kids and big family dinners. And all the pounds we had shed during our weight loss journey started creeping back on, and we started getting fat. It turns out we were a textbook example of why communities with a high walk score are a good thing. Our motto is to that it’s always better to take action than to complain. So here we are, back in Toronto. 

We’re walking like crazy and eating healthy food. Already we are seeing a difference. And we’re not so far away from the new friends we’ve made. We’ll continue to visit for the sights and sounds of the sea, and they know our door is always open. After a couple of weeks on the road, we are thrilled to be back in our own kitchen, making tasty meals like this one.
I hope you’ll keep reading as I bring some stories, some recipes, and some meal ideas to show how homemade can be fast, healthy, and delicious.

Where's the Veg?



OK, so technically a tomato is a fruit. Nonetheless, a tried and true weight management strategy is to make sure you get some fruit or veg in every meal. We like to add tomato, diced cucumber, or grated carrot to our tuna sandwiches (on whole grain homemade rye bread). Replace half the mayo with Dijon will also give your tuna salad a flavour kick! 

Turkey Apple Caesar

Delicious! We are always inspired to find new ways to use things like a basic roasted turkey. Soups, salads, stews, chilis…it’s all good. Today’s lunch finished off the last of the bird.

For two:

1 package of romaine hearts – chop or leave whole and arrange on plates
Top with:
110g diced roast turkey
1 medium apple
For the dressing, mix:
10ml/2t anchovy paste
15ml/1T each Dijon and lemon juice
30ml/2T fat free plain yogurt
Drizzle over your salad and grate on a light serving of Parmesan cheese.

Turkey Avocado Salad

310 calories per serving
Serves two

Divide 1 litre spinach leaves between two plates. Slice two large mushrooms on top.

Mix in a bowl:
15ml each Dijon, light mayo, salsa and fat free plain yogurt
Stir in 1 diced avocado and 180g diced turkey breast.

Put the turkey salad on the bed of spinach and mushrooms, and top with 1/2 bell pepper, diced.

Enjoy!

What's a "Goatmeal"?

Glorious oatmeal! Somehow this delicious breakfast treat gained the nickname “Goatmeal” in our house…but whatever you call it, it is a warm, wonderful way to start the day. We’ve been to the gym and are safe inside observing the trees dance to another “weather event”. Hopefully Kid Two and his gal are safely ensconced in their home after a trip to Brazil.

Here’s how you make it:

In a micro-safe casserole (for two): 3/4c large flake rolled oats, 1T each raisins and walnuts, a good sprinkling of cinnamon, and a large Apple, diced. (Wash well and leave the skin on; we all need the fibre!). Microwave on your machine’s oatmeal cycle or 3 mins on high, 5 on medium. Stir and serve with milk and a little brown sugar (you won’t need much, and if you don’t want any, it is still delicious). Have a great day!

For a Warm Winter Breakfast, go Left (overs)

The régime is going well and we are eating healthfully every day. That doesn’t mean we don’t crave flavour! To eat healthily and lose weight, in fact, flavour is critical. So is fibre. Today’s breakfast has lots of each – and after an invigorating workout, it will keep us fueled no matter what Mother Nature throws at us.

The toast is old fashioned porridge bread – you can find the recipe in the recipes tab. Scroll waaaaaay down…it’s an old favourite. On the side, homemade molasses (veg/vegan) baked beans and Mark Bittman’s fennel gratin, topped off with a poached egg. Life is what you make of it. We made this.

Tasty Turkey Wraps

Earlier this week we roasted a turkey, a ten-pounder purchased for about ten dollars. We’ve made a host of meals of it. Today’s lunch were these tasty wraps…with a half cup of celery and cucumber in with the turkey, and a little light mayo and homemade zucchini relish. Using a large tortilla and accompanying it with a cup of 1% milk, is about 485 calories.

The best healthy eating tip we’ve seen this week? At every meal, ask, where’s the veg? More than once it has helped us make a healthier choice, and hope it will do the same for you.

We’re having a great time figuring out interesting ways to use all the produce from our garden these days…lots of spinach and onion are on the menu. Our self challenge is also to be sure we get some protein in every meal. Today’s lunch consists of these tasty bean and cheese burritos.

On a whole wheat tortilla, layer several spinach leaves, 1/2 cup (125ml) cooked beans (these are Jacob’s Cattle beans, grown in NS and cooked here at home), an ounce (30g) of cheddar. Microwave about 2 minutes to melt and heat (or in the oven, if you prefer…just keep an eye on the cheese until it barely melts). Add a dollop of salsa (ours was canned last fall from our own produce) and plain, nonfat yogurt. Chopped green onions from the garden add extra flavour. Wrap and enjoy!

Inspired by a Trip to the Market

Halifax’s Brewery Market was full of fantastic things today – with the benefit of hothouses or a slightly milder microclimate than ours, their lettuce and spinach were way ahead. So after a blueberry muffin we picked up the delicious greens you see here. Then we hurried home to start transplanting, now that we finally are receiving some sun and milder temperatures.

When lunchtime rolled around, we topped the greens with a local apple – these are getting to the end of their useful lives now – some Cendré de Lune cheese, walnuts, and a vinaigrette of Dijon, sherry vinegar, olive oil, and tiny spoonful of maple syrup. By next week our own spinach and lettuce will be starting their picking cycle.

Next: more seeding and some flowers for the boxes…

The last day at work before launching back to the world of running my own company needs to get off to a strong start. It’s not enough that my horoscope said I was a “force of nature”; I also did 45 minutes of rowing and then got to eat this awesome breakfast. Friends and future clients, here I come!

To make this (for 2 or 4):

Cook 1/2 diced onion and two diced potatoes in a small amount 5ml or 1t) olive oil. Tip in some chopped herbs and pepper. Add a couple of spoonfuls of water and break in eggs (more carefully than I did). Surround with diced tomato and lid until eggs are cooked as you like (3-6 minutes).
