Sweat 6c/1.5l of chopped winter veg, including some aromatics like onions. I used carrot, celery, turnip, cabbage and some garlic.
Add 4c/1l broth and bring to a boil. Simmer, covered, 20 minutes to half an hour, until soft.
Purée with an immersion blender or in batches in a regular blender. Add 1c milk (you could use rice or soy milk) and stir through til heated.
Serve with a few herbs and a good grind of pepper on top. Enjoy!
