It's Raining Bread. No, it's Raining: Bread.

When you’re stuck inside and the weather is cooling, it’s a great time to bake bread. Our bread-baking definitely falls off in the summertime, so we relish the cool wet days that occasionally appear.

We made this batch of spelt-buckwheat loaves on Friday. One has pumpkin seeds throughout, and on top; the rest are plain. All of them have an almost spicy flavour, even though we didn’t add any cinnamon or other spices to them. They make spectacular toast, and we even used some as the foundation for eggs benedict when our friend Rob came to visit.

Poached Perch Dinner

Dinner in a hurry! We had a long day yesterday, and needed dinner, fast. In the freezer were a package of perch fillets we had picked up earlier this summer.

There were a couple of potatoes in the bin, and some yellow and green beans we found at the farmer’s market. Here’s what we did:

We peeled the potatoes and put them to boil in the bottom of a steamer pot. Then we put the zest and juice of a lemon, with half a cup (125ml) of water in another pot, and set it to boil. We snipped the beans and added them to the top of the steamer. Finally, we put the frozen fillets in the pot with the lemon, and turned it down to a point where just the occasioal bubble arose from the pot. Within 10 minutes, it was all done. Deliciously!

Strawberry Shortcake, Maritime Style

We East Coasters like our shortcake a certain way. First, it doesn’t really involve cake. It takes biscuits. We make fresh, hot tea biscuits. We top them with sliced strawberries that have been sprinkled with a spoonful or two of sugar (no more!) and allowed to make some juice.

Then we give each shortcake a dollop of delicious, cool whipped cream with vanilla and just a hint of sugar. Summer on a plate!

Delicious Berry Goodness!

Sweet Berry GoodnessWhen we were kids, all the women would gather in the kitchen to put up jams and preserves during harvest season. These days, we go walkabout, and make some delicious berry jam. It probably doesn’t cost less than store-made jam, but it has amazing flavour and there’s nothing like saying, “I made it myself”.

Best ways to use it: for breakfast in the middle of winter, on toast, or next day, on homemade biscuits.

Corniest Meal of the Week

It’s corn season! There’s corn at all the small veg shops in the walkable neighbourhood, and at farmstands around the outskirts of the city. We boiled up a few delicious cobs (a little butter, and you’re good to go!)

Dinner last night also featured a great green salad, and some Chili Lemon Chicken.

Skewered!

The Belanger Brothers favoured us with some lamb leg steaks recently. They were a little big to just fire on the grill (if we wanted to keep in fighting trim). So we diced them into nice cubes and threaded them onto skewers. In between, we had mushrooms, baby tomatoes, yellow zucchini, and onion. When they were grilled, we served them on platters, with some creamy avocado, sprinkled with lemon. It’s not local – but it’s our kind of local. We bought it down the street at Kelly’s.

So Delicious, We Could Spit…

Himself went to Royal Beef one day recently, when the skies were blue and cloudless, and the barbecue was calling his name. What he found was this tremendous-looking pork roast. He dressed it with a little salt and pepper, some dry mustard, and put it on the spit.

Slow, steady cooking was what it needed, and then a rest. Although there were juices on the board, with a little tenting, most were retained, and it was moist and marvelous.

There's a Reason to Freeze your Beans!

Remember back in the spring, when we were baking and freezing batches and batches of beans? This was one of them – white beans with rosemary. Fast-forward to a blisteringly hot day, and those frozen beans came in handy. We put them on the counter to thaw in the morning, and stuck them back in the fridge when they were slightly icy, around lunchtime.

About half an hour before dinner, we mixed up a couple of tablespoons of white wine vinegar, a tablespoon of creamy Dijon, and some olive oil. We blanched some green beans, peas, and asparagus, then chilled them quickly in an ice-water bath.

We chopped in a litte oregano from the garden, and a green onion. Then we diced a couple of farmer’s market tomatoes. We grated in some cheddar from Montforte. Then we tossed it all together in a big bowl with some salt-cured olives from Plank Road Market.

Pair it with a light, bright, summer wine, and the heat will suddenly seem more bearable.

Another Grain in your Bread? How's that Spelt?

A week or so ago we picked up some amazing spelt flour from Monckton Organic Farms. It makes tremendous bread, and also pasta. We even made some pizza this week, using their amazing flour in the crust. Every bit turned out to be delicious.

I'm Feeling a Bit Crunchy!

Wow! It’s been ages since our last post. It’s because of work – too much of it all at once. But who can turn down exciting challenges and opportunities? Now there’s time to relax, but first I’ll have to get the kinks out – and eat some proper food.

When we’re feeling a little crunchy and out-of-sorts, we like to have a nice batch of fresh vegetables. These radishes and cukes were from the East Lynn Farmers Market. We dressed them with a little cider vinegar, a drizzle of olive oil, and some black sesame seeds.
