I learned this recipe from my friend Helena, when we were all still innocent kids…it’s great when you want a low-work barbecue side dish.
Take two large sheets of aluminum foil. For 3-4 people, slice 3 potatoes (with or without skin), a bell pepper, and an onion.
Sprinkle with salt and pepper. Throw in a few herbs if you like. Drizzle with olive oil and toss to coat.
Wrap the first foil packet, then turn and wrap the second to cover the seams. Place on the grill while you’re reheating. Turn from time to time. By the time you cook your steaks or chicken breasts, it’ll be done.
