Making a Hash of Breakfast

20130505-082849.jpgThis time of year, it gets easier and easier to eat local food, even on the chilly windswept coast. Greens and hardy veg are growing in the garden in our cold frames, and hothouse peppers are making an appearance. With all the beauty and deliciousness of the garden, it is work (and lots of it), especially a first year garden like ours. So we feel fully justified in eating a breakfast that has too many calories for a regular workday.

For two:

Half a small orange pepper
1 stalk celery
1 small diced onion
2 diced potatoes
4 Cremini mushrooms
2 Cavicchi’s sausage patties, made into tiny meatballs
2 large eggs

Cook the vegetables in a nonstick or cast iron skillet with about 5ml/1 tsp olive oil. Lidding the pan will help the potatoes soften. Stir once or twice. When the potatoes are nearly tender, sprinkle the sausage balls on top and cover, allow them to sit on low heat until the sausage are cooked (2-3 minutes). Stir. Crack the eggs on top, cover, and cook until the eggs are done as you like.enjoy. We did!

Our (Toast) Cup Runneth Over

What a weekend! Yesterday we installed the first of two new cold frames in the garden. We’re very excited to see what produce we’ll be able to grow in the first year of this new plot. Certainly we have many, many seedlings started, but the wild card will be the animals. No more raccoons, but certainly squirrels, crows, and we hear, deer.

After a day of house and yard work, it was a perfect evening of barbecue with good friends. We’ve awoken to a glorious sunny day with the sun glinting off the bay. How can you feel anything but grateful. So in celebration, a special breakfast – toast cups with tarragon mustard, Cavicchi’s sausage, jumbo poached egg, and some sliced tomato. Bring on the gardening!

Peppery Goodness

Last night we were craving comfort food after a day of digging – preparing the garden for a first year’s veggie-growing in the new house. It was chilly out, so stuffed peppers fit the bill.

The oven was set to 350F.

We started by hollowing out two peppers and taking a tiny slice as necessary to make them sit straight. Then we sautéed the chopped pepper tops and a couple of stalks of celery, as well as an onion, in chili garlic oil. Next we added some frozen corn til it was a bit toasted. Lastly, we stirred in black beans (home cooked and frozen until needed – defrosted in the microwave) and some cooked brown rice (same story).

We filled the pepper shells and poured 60ml or 1/4 c of marinara on top. They were baked in a lidded, foil-lined casserole for 45 minutes. Then, removing the lid, we grated some extra old cheddar on each. 10-15 more minutes to melt, and they were ready, along with a fresh salad.

Out to Pasture

It’s coming! Spring has nearly sprung. Today we were at the Halifax Seaport Market and picked up a delicious steak from Pasture Hill Farm. That, with a few blue fingerlings and a salad seemed like it would be a heavenly choice. We were just tallying up our purchases and we spotted them: local grape tomatoes from Den Haan’s. Eating the Dragon

20130303-121926.jpg. Last night was The Man’s birthday and we celebrated with a prime rib roast. Today, the leftovers are in a redux of last week’s grilled salad:

Per plate:

Two good handfuls of baby greens
60-120g of sliced roast beef
Drizzling of sun-dried tomato dressing
15-30 ml of Dragon’s Breath Blue, crumbled over top

Nothing left to do but to enjoy!

Grilling on our Minds

Yesterday was glorious! Sunny, mild, breezy, and offering just a taste of spring. The clouds have moved in again and the wind is chillier as it blows up from the bay, but the yearning for spring salads isn’t diminished.

We grilled a steak and searched for provisions in the fridge – some spinach, a few leftover pickled beets, and an end of goat cheddar. With the addition of some walnuts and a drizzle of spicy mango dressing, it seemed like a good transition from the soups and stews of winter to the salad days we know are coming.

Date Night

Sticking with a healthy eating plan means making good choices, but for those of us brought up to not waste food, sometimes the food prompts the menu, rather than the other way around. In this case, four rapidly-ripening bananas and a bunch of leftover dates from holiday baking needed to be used or thrown away. There was only one solution: banana date muffins. We started with a basic whole wheat muffin batter and added four mashed bananas, a cup of chopped dates, and half a cup of ground hemp seed (thanks Mariposa!)

Just one of these tasty muffins has enough calories, fibre, protein and fruity goodness to carry us through the morning. The rest are in the freezer for one of those days when shoveling takes precedence over breakfast making…we know they’re coming!

A Smooth Sendoff…with a Kick!

One of the best ways to up your personal productivity is to get the day off to a good start, and that means eating breakfast. I know, that seems easier said than done, but here is a great smoothie for two that takes almost no time, and will put a little spice in your step:

500ml/2c frozen berries
500ml/2c plain no fat organic yogurt
250ml/1c 1% milk
30ml/2T Justus Spicy Mexican Hot Chocolate mix

Blend until smooth and enjoy!

On the straight and narrow

As we rang in 2013, we gathered in Toronto for Dad W’s 80th birthday. What a celebration! However the celebratory photographs revealed that the “middle generation” all had some work to do in the healthy eating department. Since returning to Nova Scotia we are making sure to also return to a proper diet and exercise regime. That includes careful meal planning and at least 30 minutes of exercise every day.

The great part of this is rediscovering favourite recipes we’ve been ignoring, like this one from Cooking Light.

First Meal of 2013

20130101-084409.jpg the holidays are winding down and it’s time to get back on track. We plan to be in shape to seize every opportunity. Even in a hotel I can manage a healthy start with yogurt, berries, and walnuts from the buffet. (Amazing trick for weight loss: just because it is there and free, doesn’t mean I have to eat it!)
