No Fish Were Harmed in the Making of this Chowder

  
One of the great things about this time of year is the fantastic selection of vegetables. Although it isn’t tomato season quite yet on the coast, everything else on this tray came from our garden: red onions, pattypan squash, and turnip. Diced with our own oregano and a splash of olive oil and vinegar, we roasted this tray for 30 minutes at 400F, then let them rest in the oven 30 minutes or so while we boiled water and made pasta. Half the batch formed our pasta topping, so then today…what to do with the leftovers?

  

We diced a potato and cooked it in 2c water until tender (about 6 minutes). To this we added the 2c roasted veg, and an equal amount of 1% milk (plant milk would work just as well). Heat until piping hot and serve with a sprinkle of smoked paprika and basil on top.

  Our daughter is coming tomorrow for a visit, in advance of her anniversary party. She tells me she’s sick, so soup will be in order. If we aren’t too greedy, she might get one of these as well.

These sun dried tomato olive herb buns are adapted from an old favourite, the Weight Watchers New Complete Cookbook. I love that there is no added sugar or and very little oil. We switched up the flour to 100% whole wheat and added olives when I ran out of tomato pieces.  I also shaped them like burger buns so they would be great for sandwiches of all kinds. All the fresh herbs are from our garden, and we skipped the salt. For a vegan version, simply omit the egg white glaze. Makes 12.

2c/500 ml boiling water

6 sun dried tomato halves, not oil packed, cut in slivers

6 stuffed olives, chopped

1T/15ml yeast

875ml/3.5c whole wheat flour

1/4 c chopped herbs (I used rosemary, oregano and thyme)

1 beaten egg white

In a 2 c glass measure, pour boiling water over tomatoes and let stand about 5 minutes. Then scoop them out with a slotted spoon into another dish and set aside for later. Pour off enough liquid from the measuring cup so you have 310ml/1-1/4c and let it cool to lukewarm.

Sprinkle the yeast over the lukewarm tomato water and let stand until foamy, about 10 minutes.

Measure flour into a large bowl. Stir yeast mixture with a fork, then with a wooden or silicone spoon, mix it all at once into the flour, stirring until it mostly cleans away from the sides of the bowl. 

Scrape onto a lightly floured surface and knead about 30 times until smooth. Shape into a ball.

Spray your mostly-clean bowl with cooking spray or coat with a very light coating of olive oil. Put your ball of dough in it and cover with a clean tea towel. Let rise in a warm place about an hour, until doubled. (Honestly it was quite chilly in the kitchen today but it worked fine).

Punch down the dough then knead in the herbs, tomatoes, and olives until well distributed. 

Divide into 12 pieces and on a lightly floured surface, pat each into a circle about the size of a burger bun. Place on cookie sheets on parchment or Silpats, about 3 fingers apart, and cover again. Let rise for another hour. Notice how if you are working on something at your desk in the home office, the buns summon you to take a regular break to move around.

Preheat the oven to 400F /200C/ Gas mark 6. Brush tops with egg white if you are using it, and bake for about 20 minutes until golden brown and they sound hollow when tapped on the bottom. 

Remove from the pan and cool on a rack.

There's something fishy about this curry…But we're bananas for it!

   We’ve been in “use it up” mode at our house lately, finding creative ways to avoid the grocery store and use what’s on hand. This includes working down things we have in the freezer, in anticipation (hope?) of another season of garden bounty. Also, I was once again fooled into buying bananas. Here in Nova Scotia, even if the bananas look as green as grass, they won’t last more than a day or two. So here’s what we did – enough for last night’s dinner and lunch today…

Dice a large carrot, an onion, and two peeled white potatoes. Put on to boil in some vegetable broth, then simmer 10 minutes til tender.

Chop up half a pound or about 200g of fish, or use leftover cooked fish, and add to the veg along with a couple of large spoonfuls of dried unsweetened coconut and a tablespoon (15ml) of curry powder. Simmer until fish ish opaque and stir in a cup or so of milk. 

Heat through…and here’s the surprise: in each bowl, slice in half a banana. Top with the soup and some chopped herbs – we have basil and Vietnamese coriander growing in the window. 

It was delish, and we hope you enjoy it.

It's Not Too Late for Salad!

As the weather cools and many of our garden crops have been harvested, it can be easy to turn our thoughts to root vegetables. Well we should! But it isn’t too late for salad yet, even without cold frames. Yesterday we harvested delicious beets and Swiss chard, an we still have a healthy crop of mizuna. All of this was turned into today’s lunch salad, along with some chopped apple, walnuts, and feta cheese, held together with this vinaigrette (for two):

15ml/1T each of red wine vinegar, tarragon Dijon, and olive oil, whisked together. If you don’t have tarragon Dijon, use regular, and add some chopped herbs of your choice.

Tasty – although we admit if the chill stays in the air, we will turn our thoughts to soup!

We do eat more than breakfast. Really!

Looking over recent posts was very revealing. So much breakfast! Perhaps it is because that is when there is time to write. Who knows? So today, once again, a report on the start of the day.

The chill is in the air, a harbinger of fall. Heather and thistles bloom in the garden. I don’t want to face autumn, but it will come, regardless. So we might as well do it with a full tummy. This morning’s egg features mushrooms, some chopped chard and tarragon from our garden, and a little cheddar cheese. The jam on the toast is local, too…made here at home.

This isn’t our only meal of the day, though. Tonight we’ll be joining our friends at Ratinaud for Les Saucisses en Folie. Real local charcuterie…you can’t get much better. Perhaps a reason to love the end of summer, after all. Unfortunately tickets are sold out. But you can taste their delicious wares at the Kitchen Table on some Friday or Saturday soon, and we are sure they will be worth the wait.

Incredible Grill-Roasted Veggies

These veggies are as fresh as can be – harvested in our own garden and roasted within minutes of being picked.

Choose your own mix of veg and herbs. Chop into bite-sized pieces, toss with a little olive oil and wrap in a double layer of foil. Put this on your grill while it’s heating, turning occasionally. It’ll be done when your steak or pork chop is cooked. Not grilling meat? About 10 minutes (plus the preheating time) should do the trick.

Leftovers for Breakfast

After a fast walking round of golf on a hilly course yesterday, we were definitely hungry. So we took advantage of our garden produce and topped a whole wheat pizza crust (find out how in our recipes section) with a thin layer of homemade zucchini relish from our storag. Then a layer of spinach, chopped oregano, mushrooms, sliced radish, and green onions. A light sprinkle of feta and cheddar finished it – not so much that the veg would steam.

This morning the leftover slices made a great breakfast, topped with a perfectly poached egg.

We can get some satisfaction

…from making real food at home. Today’s breakfast is whole wheat toast with jam we made last summer. Beside it, eggs scrambled with local farm peppers, mushrooms and celery, flavoured with tarragon and chives from our own garden.

Today is off to a fantastic start!

Today's Lunch is Yesterday's News

Yesterday was a hectic day – lots of meetings, running around, and a restaurant lunch. So by the time we returned home we were crangry (hungry and cranky)! We needed food that was healthy, easy, and quick. In less than the time to call for delivery, we made this delicious pizza from scratch. We used our usual crust recipe, but with 100% whole wheat flour, instead of half and half.

The added bonus? It makes enough for dinner for two, and leftovers for today’s lunch. On top, we used homemade zucchini relish, some feta, cheddar, red peppers, mushrooms, olives, and a little prosciutto. Tasty!
