Chilly Day Vegetarian Chili

1 medium onion, diced

2 stalks celery, diced

1/2 cup / 125 ml red or yellow bell pepper, diced

1 tbsp. / 15 ml olive oil

Saute vegetables in oil until onion is tender. Then add: ml

1 tsp. / 10 ml cumin

1/2 tsp. / 2 ml crushed dried chipotle pepper

2 tsp. / 10 ml oregano

4 cups / 1 l stewed diced tomatoes without salt

2 cups / 500 ml cooked kidney beans

1 cup / 250 ml chickpeas

1 cup / 250 ml black beans

Bring to a boil, turn heat to low and simmer 1/2 an hour to an hour until thick and delicious!
