Savour the flavour…

Yesterday was an absolutely stunning day here in Toronto; we took a nice long walk (about 5.7km) through the city, taking in the sights and eventually making our way to St. Lawrence Market for produce. We stopped in along the way to take in the awesome Gothic Revival Cathedral Church of St. James, with memorial plaques commemorating many of Toronto’s noted citizens. We were intrigued by the very contemporary Stations of the Cross.

To the south, we swung by Berczy Park’s new dog fountain enroute to the market. Kids and pets alike were enjoying the spraying water. We had fun finding the one cat statue amongst the dogs, and to discover just what she was looking at. (We won’t tell just now – you should check out the mystery yourself!)

The sun was blazing and hot, so by the time we arrived home, we were in the mood for something quick and cool, that wouldn’t overheat the kitchen. We put some potatoes on to cook while we enjoyed a cool beverage on our balcony and took in the sights of the neighbourhood. When they were cooked, we let them cool in the fridge while we prepared the rest of this tasty curried salad. For two, as a main course:

For the dressing, whisk in a large bowl:

3 tablespoons (45ml) mayonnaise

1/4 cup (60ml) cider vinegar

2 tablespoons (30ml) curry powder – more or less, to your taste

3 boiled potatoes, cooled and peeled, and cut into chunks

1 red pepper, diced in bite-size pieces

2 cups cooked chickpeas (or one can)

1 cup frozen green beans

1/4 cup (60ml) chopped unsalted peanuts

3 leaves basil, sliced finely

Mix all the vegetables into the salad, including the chickpeas. Divide between the plates and sprinkle with peanuts and basil. You can easily scale up this recipe to serve more people, and it keeps well in the fridge, gaining flavour as it sits. Enjoy!

A Zippy Start for Your Day

After a week of wild weather, it appears the sun is making an effort to shine. We are definitely planning to take advantage of that. To get ready, a big mug of Full Steam coffee, and a delicious goat cheese-cranberry-lime panini. Here’s how we made it, for two:

Mix 2oz/60g goat cheese, zest and juice of 1/2 lime, 1T/15ml chopped cilantro. Spread on 4 slices whole grain homemade raisin bread. Add 2T/30ml cranberry preserves to each, spread, and assemble sandwiches. Our preserves came from a Nova Scotia business, Terra Beata.

Butter both sides and cook on a panini press, grill, or in the frying pan until golden. Enjoy!

Spice Up Your Salad!

La princessa and her parents left this morning and now the house is eerily quiet. We’re so grateful to have had them with us for a few days, and glad they enjoyed our city by the sea.

Today is also the day we get our diet and exercise routine back on track – so here’s an easy meal to kick things off, for two:

Leftover grilled steak, about 250ml/1c, sliced thin

In a medium nonstick skillet, heat 5 ml each butter and olive oil, and cook, covered, just til tender:

1 sliced onion
2 sliced mushrooms
1 sliced green pepper

Add steak slices and a sprinkling of chipotle powder or a minced Jalapeño.

Serve over 500ml/2c mixed greens.

We’re fortunate to have greens from our own garden, but use a variety to make it more interesting.

Around the Corner from Nice

20130606-071912.jpg Our dinner plans were foiled. A couple of days ago we picked up some fresh green beans and a piece of salmon, expecting to make a slight twist on the classic Salade Niçoise. But some twists of fate kept the recipe off the menu for three days, and third-day fish is never a good idea. The beans weren’t looking so hot, either.

Not deterred, we gathered a basket of greens from the garden – tender turnip greens, arugula, spinach, chard, beets, and a few kinds of lettuce. Some pretty French radish. It would be enough. We made do with some good-quality canned tuna, a red pepper (locally hothouse grown) and free range eggs. Olives and a Dijon lemon dressing rounded out the meal. How can you be anything but grateful in the season when home gardens are springing to life with delicious surprises every day?

Pancakes Again!

The great thing about pancakes is that most recipes make a large batch, enough for a family. But when there are only two of you, what can you do? Of course there’s always the option of going to a local breakfast place, if you have one close by. But even then, the portions are usually unhealthily large. If you make them at home, your best friend is the freezer. Freeze them in a single layer in zipper bags, and then when you want pancakes again, simply pop them in the toaster on the lowest setting (oven or micro will work as well, but the toaster is so easy!)

Today we warmed up some frozen mixed berries and a sliced banana, and then topped them with Greek yogurt and roasted almonds. That should keep us warm for a hike on the beach!

It’s a big week for us, with an important project that is using up lots of our energy. So something healthy is the best way to start the day. In our case, a good old-fashioned western sandwich, on whole wheat bread, dressed up with a tiny sprinkling of cheese and some cherry tomatoes. Thanks to Better Bulk, Plank Road Market, Royal Beef and Rowe Farms for the ingredients…all just a walk away!
