Go West(ern)!

It’s a big week for us, with an important project that is using up lots of our energy. So something healthy is the best way to start the day. In our case, a good old-fashioned western sandwich, on whole wheat bread, dressed up with a tiny sprinkling of cheese and some cherry tomatoes. Thanks to Better Bulk, Plank Road Market, Royal Beef and Rowe Farms for the ingredients…all just a walk away!

Earlier this week we were at Royal, picking up a chicken. But they also had these tremendous veal cheeks. So today as the heat returned, we made…cold day food. Go figure! Start some veg; in our case, orange pepper, shallot, and garlic. Then brown the cheeks and deglaze with whatever’s handy. Red wine, in our case. Add some pepper and chopped rosemary, dried chanterelles and a jar of stewed tomatoes. Pop in a 350 oven for an hour or so covered, then boil some potatoes while the pan is percolating along uncovered.

So Delicious, We Could Spit…

Himself went to Royal Beef one day recently, when the skies were blue and cloudless, and the barbecue was calling his name. What he found was this tremendous-looking pork roast. He dressed it with a little salt and pepper, some dry mustard, and put it on the spit.

Slow, steady cooking was what it needed, and then a rest. Although there were juices on the board, with a little tenting, most were retained, and it was moist and marvelous.
