Stormy Day Chowder

We’ve been under a blizzard warning today and haven’t even ventured outside. Here on the east coast we know what to do during stormy weather – keep calm and make soup! The key to managing when roads are impassable is to have a good stock of staples on hand at all times. Had we lost power, we might have subsisted on tuna, or peanut butter, or dozens of other “in a pinch” choices. But this time we were fortunate to just have to hunker down and keep warm.

Our easy, delicious chowder was made from ingredients we always have on hand: frozen fish fillets, potatoes, onions, carrots, celery, and a few other flavours.

For two:

Place 240g/8oz fillets on a plate to thaw enough to safely dice. Meanwhile…

Dice:
1 peeled potato
1 medium onion
1 peeled carrot
1 stalk celery

Bring to boil and simmer in 250ml/2c water until tender.

Add diced fish and:

2 bottled or canned anchovies, chopped
2 ml pepper

Simmer until fish is cooked and will flake.

Add:

1 can evaporated skim milk

Heat through and enjoy with crackers or whole meal bread. We did!

First Meal of 2013

20130101-084409.jpg the holidays are winding down and it’s time to get back on track. We plan to be in shape to seize every opportunity. Even in a hotel I can manage a healthy start with yogurt, berries, and walnuts from the buffet. (Amazing trick for weight loss: just because it is there and free, doesn’t mean I have to eat it!)

A Wintry Lunch

20121223-141745.jpg. What a wintry day! On the way home from the last Mass of Advent, we stopped and watched the waves crashing on Queensland beach. The ocean in winter has awesome power.

Arriving back at the house, we busied ourselves with cleaning out foods from the fridge, in preparation for all the upcoming meals at the homes of friends and family. Today’s lunch: chicken and white bean soup, with oatmeal batter-bread. Instant warmth!

Warm and Filling

20121210-210907.jpg The first winter storm threatened with its presence today. Hard, driving rain and wind, mixed with a little snow. The kind of howling night that makes you want comfort food. But after a day of work, how can slow food be not so slow?

We had some delicious white beans, pre-cooked, in the freezer. A couple of pork chops. And some San Marzano tomatoes. We put the chops in a casserole, topped with the beans and chopped rosemary. Over that, a couple of tomatoes each, and a little juice. More rosemary and pepper.

After 45 minutes in a 400F oven, covered, a delicious tender dinner was waiting. We finished the plates with a handful of greens. Pure comfort.

Real food is important!

20121130-060036.jpg Silly season has begun…when our workdays are busy but we also have social events every night. The food choices tend to be highly caloric and low on nutrition. This week our solution has been to keep snacking to a minimum, then make something satisfying when we get home, like this delicious salmon risotto. Sorry for the low light, but candles make every day better!

We got up early yesterday…lots to do! We fueled up with a delicious omelette – all fresh and local. Eggs, a yellow pepper, green onions, shiitakes, and a little shred of cheddar.

Secrets of the Freezer

It’s the time of year when you really feel the urge to de-clutter…lots of household “sprucing up” projects. And then one day you look in the freezer.

So many things have accumulated over the winter. One of them, a bag of roasted beets, another, the remains of a package of phyllo. A few mushrooms, a bit of goat cheese, and voilà! Beet Wellingtons.

Leftover Soup

As local grocery stores begin to stock spring vegetables from distant producers, it can be tempting to fill the table with fresh green foods like asparagus. But St. Patrick’s Day or thereabouts is a good time to remind ourselves that there are still delicious ways to serve the carrots, cabbages and potatoes that are the staple of Canadian winter locavores. In our case we heated and puréed the leftovers from Saturday night’s Boiled Dinner. Then we stirred in a little cream we picked up at Better Bulk, and garnished with a few carefully-hidden slices of corned beef.

Holy Mackerel!

Yesterday when we were at Hooked we also discovered this tasty smoked mackerel. It seemed like the perfect breakfast…even fit for Toronto’s Archbishop,Thomas Collins, who became a Cardinal today in Rome.

The Slow Road to Deliciousness!

The weather in Ontario this week hardly constitutes the kind of weather for “cold weather food”. But it’s a small sacrifice for something so delicious. We had two lovely local lamb shanks in the freezer. While those were browning in a Dutch oven on top of the stove, we chopped a carrot, a hot pepper, a leek, and a stalk of celery. When the shanks were browned we turned the oven to 350F. Then we added the veg and sautéed until they were softened a bit. After deglazing with a little beer, we added a stalk of thyme (the leaves will fall off and the stem can be fished out before serving). Other flavours included a few raisins, 3 chopped dried apricots, 6 pitted, chopped black olives, some oregano, chili powder, and ground cloves.

We poured over a pint of diced tomatoes (or half a large can), covered it, and put in the oven for 20 minutes. Then we turned the shanks, let it go for another 20 minutes. For the last 10 minutes we took the lid off, and in the meantime, made mashed potatoes. The lamb was fall-off-the-bone delicious. Happy Groundhog Day!
